In the late 1800’s, Vittorio Ortalli developed a superior quality aceto balsamico from the Modena vineyards, which has remained a heritage greatly cherished by the family ever since, as an expression of unbounded for the Modena countryside and the family traditions.
Today, with Andrea Ortalli, a fourth generation family member who brings a fortunate combination of love of tradition and business talent to the company, we have realized our dream and given concrete form to the family mission:

In our production philosophy the quality of the finished product always depends on extreme care during every procedure, and strict attention to every individual detail: gentle pressing of the best carefully selected grapes to create the must, utmost care during the important traditional cooking stage, delicate natural fermentation, extended seasoning and maturing in high quality wooden casks, arriving at the decanting and topping up stage, and finally the long awaited off and bottling
In order to ensure the quality of our products, Ortalli controls the entire production chain with strict laboratory tests, from raw materials right through to product packaging, according to the procedures stipulated in the most advanced and strictest quality certification standards. As a company Ortalli is certified for Global Standard for Food Safety Version 6 (Grade A),Global Standard for Food Safety Version 6 (Grade A), IFS International Food Standard Version 6 (Higher Level) da CSQA Certificazioni Srl.
